Ker Sangri is arguably the most iconic ingredient pair in Rajasthani cuisine. Ker (Capparis decidua) is a wild berry with a sour, slightly bitter taste; Sangri (Prosopis cineraria) is a long, dried bean with a mild, earthy sweetness.
