Sweet Lemon Pickle

Unlike the sharp, oily pickles, this sweet lemon preparation uses jaggery to balance the citrus tang. Lightly spiced with fennel and cardamom, it's closer to a preserve than a pickle — wonderful with dry Rajasthani breads or as a palate cleanser.
